Roasted sweet potato slices replace bread for a naturally gluten-free base, topped with creamy avocado and your favourite seasonings. Perfect for a quick lunch, light dinner, or a wholesome snack.
🍽 Serves 1 🕘 25-30 minutes Difficulty: Beginner
Ingredients:
1 sweet potato
1 avocado
Drizzle of extra virgin olive oil (optional)
Instructions:
Slice the vegetables. Lay slices of sweet potato on a baking tray.
Bake for 15-20 min until soft inside.
Remove from the oven.
Top with oil (optional), and avocado.
Sprinkle with your favorite seeds and herbs or my Everything Avo Toast Seasoning
