Nothing beats a freshly made pesto! I love combining different textures and flavours in my green pesto. This Green Goddess Pesto has been my favourite lately. It's herby, earthy, and fresh and has an amazing smooth yet occasionally crunchy.

šŸ½ Serves 2 šŸ•˜ 5-10 minutes Difficulty: Beginner

Ingredients:


  • 1 cup of carrot greens

  • 1/2 cup of spinach

  • 1/2 cup of lettuce (or 1/2 cup of spinach)

  • 1 cup herbs, I used basil, curly parsley, Italian parsley, and thyme

  • 2 cloves of garlic

  • 1/4 cup lightly roasted pine nuts

  • 1/4 cup blanched almonds

  • A small handful of Brazil nuts

  • 1/2 lemon, juiced

  • Salt to taste

  • 1/2 cup of extra virgin olive oil + more to serve

  • 1/4 cup of hemp hearts + more to garnish

Instructions:


  1. Using a food processor or pestle and mortar, place carrot greens, spinach, lettuce, herbs, garlic cloves, nuts, lemon juice and a drizzle of olive oil. Blend until well combined.

  2. Incorporate the remaining extra-virgin olive oil and hemp hearts and mix well until combined.

  3. Add salt to taste

  4. Serve drizzled with more extra-virgin olive oil and garnish with hemp hearts.

  5. Enjoy!

Notes: adding extra-virgin olive oil too early in the blending process could create bitterness. To avoid that, incorporate extra-virgin olive oil in the last stage using a spatula. The quality of extra-virgin olive oil is crucial.
