Warmer days are finally here and I instantly started craving this salsa. I could honestly have it every single day. It’s sweet, tangy, creamy, and so fresh! I love it with corn chips but it’s also a perfect addition to tacos, tostadas and even burritos! Yum!
Oh, and it takes less than 10 minutes to make! 👌💚
🍽 Serves 3-4

Ingredients
1 ½ cup of chopped mango
2 large avocadoes (chopped)
1 can of black beans/ 1 ½ cups of cooked beans
1 red onion (diced)
2 medium tomatoes (chopped)
Dressing:
½ cup finely chopped fresh cilantro
1 Tbsp extra virgin olive oil
1 clove of garlic, minced
Juice from 1 lime
1 tsp of your fav nacho seasoning (sub. for ½ tsp cumin, ½ tsp sweet paprika)
Salt and black pepper to taste
Instructions
Prepare the ingredients, chop mango, tomatoes, and avocadoes, dice the onion, coriander and drain/cook the beans.
To make the dressing: In a medium bowl or jar, combine olive oil, minced garlic, lime juice, nacho seasoning, salt, pepper, and diced coriander.
Assemble the bowl, place beans, avocado, mango, tomatoes, and red onion. Pour the dressing over the salad and mix well.
Serve with your favorite corn chips.
Notes: If you don’t have access to fresh mango, you can use frozen.
