No-bake Protein Bars


Gooey Chocolate, Peanut Butter, Raspberry and Hemp Seed Protein Bars... Yum! 👌

The base is chocolaty, fudgy, and chewy, the centre is made of peanut butter, and they are topped with melted chocolate, hemp seeds and raspberries.


What makes them so special is that they are packed with protein! Perfect as a vegan snack or dessert. Save this recipe for later! 💚


🕘 15 minutes


Ingredients

  • 1 cup of smooth peanut butter

  • 3 Tbsp cacao powder

  • ¾ cup hemp seeds @hemp.nz – Gifted

  • 1 cup dates

  • ½ cup chopped cashews

  • 1 tsp vanilla essence


  • 1 cup peanut butter

  • ¼ cup maple syrup (optional)


  • 3/4 cup dark chocolate (approx. 150g)

  • 2 Tbsp melted coconut oil


Toppings:

  • Hemp seeds

  • ½ cup of frozen raspberries / freeze-dried raspberries


Instructions

  1. In a food processor, place peanut butter, hemp seeds, cacao powder, dates, cashews and vanilla essence. Blend until well combined.

  2. Place in a square cake tin, spread evenly with a spatula and press.

  3. In a medium bowl, combine peanut butter with maple syrup (optional), and spread it over the base, place it in the fridge for the time being.

  4. Melt the chocolate with coconut oil and pour it over the peanut butter layer.

  5. Top with hemp hearts and raspberries.

  6. Place in the fridge for 30+ minutes to set.

  7. Enjoy! 😊


Notes: these can be stored in the freezer! Remove from the freezer 15-20 minutes before serving👌
