This salad is not only deliciously spicy, and crunchy. The unexpected apple sweet twist makes it super exciting and almost addictive. So yum! Make sure you try this Spicy Chickpea Salad!

Ingredients:
1 can/ 1 ½ cups of cooked chickpeas
1 cucumber, chopped
1 avocado, chopped
2 medium apples, chopped
1/2 red onion, chopped
2 Tbsp chopped parsley
2 Tbsp chopped dill
2 Tbsp chopped chives
Dressing:
2 Tbsp extra-virgin olive oil
1 garlic clove, minced
Juice from ½ lemon
½ Tbsp cumin powder
1 tsp chili flakes
Salt and pepper to taste
A small handful of mint leaves to garnish
Instructions:
Prepare the ingredients, chop the vegetables, fruits and herbs.
Prepare the dressing, in a small bowl whisk extra-virgin olive oil, lemon juice, minced garlic, cumin powder, chili flakes, salt and pepper.
Assemble the salad, in a large bowl place cucumber, apple, chickpeas, avocado, red onion, parsley, chives and dill. Pour the dressing over the salad and mix until well combined.
Serve chilled.
