Avocado Hummus with Fresh Salsa

If you’re an avocado lover, this creamy, velvety avocado hummus is your new best friend! Packed with healthy fats, protein, and zesty freshness from the homemade pico de gallo salsa, it’s perfect as a dip or spread to brighten up any snack or meal.


🍽 Serves 3-4 🕘 15-20 minutes Difficulty: Beginner


Ingredients:


  • 1 can chickpeas

  • 2 avocados

  • 3 Tbsp tahini paste

  • 2 garlic cloves

  • 2 Tbsp extra virgin olive oil

  • 3 Tbsp lemon juice

  • 1 Tbsp apple cider vinegar

  • Bunch of fresh coriander

  • Big pinch of salt


Pico de gallo fresh salsa:


  • 1 red capsicum (finely chopped)

  • 1 tomato (finely chopped)

  • ½ red onion (finely chopped)

  • 2 Tbsp lemon juice

  • 1 tsp chili flakes

  • 2 Tbsp coriander (diced)



Instructions:


  1. Prepare all the ingredients.

  2. Place all the ingredients for hummus in a food processor and blend until smooth.

  3. In a small bowl, combine all the salsa ingredients.

  4. Assemble in a bowl: avo hummus, salsa, extra virgin olive oil, chili flakes

  5. Enjoy with nachos, chips or fresh vegetables like cucumber, capsicum, carrots.
