Vegan Summer Skewers

Nothing says summer like juicy, flavorful BBQ skewers - and these vegan ones are bursting with color and crunch! Marinated overnight in a tangy, smoky sauce, the tofu and veggies soak up all the deliciousness. Perfect for grilling on warm evenings, these skewers are tender, vibrant, and so satisfying. A must-try for your next summer cookout!
š½Ā Serves 4-5 šĀ 35-40 minutes + marinade overnight Difficulty: Beginner
Ingredients:
2 medium zucchinis/courgettes
1 yellow capsicum
1 red capsicum
1 red onion
200g mushrooms
1 block tofu
Marinade:
1/3 cup tomato sauce/ketchup
4 Tbsp BBQ sauce
1 Tbsp garlic powder
3 Tbsp maple syrup
4 Tbsp sundried tomato oil
½ cup water
2 Tbsp tomato paste
2 Tbsp dried capsicum/ sweet paprika powder
Salt, pepper
Instructions:
Press the tofu. I like to use my cookbooks for that.
Prepare all the ingredients for the marinade.
In a medium-size airtight container, mix all the ingredients for the marinade. Set aside.
Cut all the vegetables into 1-2cm pieces.
Cut the tofu into 1-2 cm cubes.
Place all the vegetables and tofu into the marinade and mix well until everything is covered with the sauce.
Refrigerate overnight or for at least 5 hours.
Cut the mushrooms in half if large
Assemble the skewers.
Grill on a skillet grill or BBQ until golden on each side.
