Vegan Summer Skewers

Nothing says summer like juicy, flavorful BBQ skewers - and these vegan ones are bursting with color and crunch! Marinated overnight in a tangy, smoky sauce, the tofu and veggies soak up all the deliciousness. Perfect for grilling on warm evenings, these skewers are tender, vibrant, and so satisfying. A must-try for your next summer cookout!


šŸ½Ā Serves 4-5 šŸ•˜Ā 35-40 minutes + marinade overnight Difficulty: Beginner


Ingredients:


  • 2 medium zucchinis/courgettes

  • 1 yellow capsicum

  • 1 red capsicum

  • 1 red onion

  • 200g mushrooms

  • 1 block tofu


Marinade:


  • 1/3 cup tomato sauce/ketchup

  • 4 Tbsp BBQ sauce

  • 1 Tbsp garlic powder

  • 3 Tbsp maple syrup

  • 4 Tbsp sundried tomato oil

  • ½ cup water

  • 2 Tbsp tomato paste

  • 2 Tbsp dried capsicum/ sweet paprika powder

  • Salt, pepper



Instructions:


  1. Press the tofu. I like to use my cookbooks for that.

  2. Prepare all the ingredients for the marinade.

  3. In a medium-size airtight container, mix all the ingredients for the marinade. Set aside.

  4. Cut all the vegetables into 1-2cm pieces.

  5. Cut the tofu into 1-2 cm cubes.

  6. Place all the vegetables and tofu into the marinade and mix well until everything is covered with the sauce.

  7. Refrigerate overnight or for at least 5 hours.

  8. Cut the mushrooms in half if large

  9. Assemble the skewers.

  10. Grill on a skillet grill or BBQ until golden on each side.

  11. Enjoy!
