Almond Tofu Stir-Fry

What’s your go-to quick and delicious weeknight dinner? Try this easy Almond and Tofu Stir-Fry - packed with crunchy veggies, toasted almonds, and a flavorful sauce that brings everything together. Comforting, satisfying, and perfect for busy evenings when you want something wholesome without the fuss.
🍽 Serves 4-5 🕘 35-40 minutes Difficulty: Beginner
Ingredients:
1 pack of firm tofu
½ cup peeled almonds
1 medium red capsicum
1 medium yellow capsicum
4 cloves of garlic (minced)
2 cm ginger (grated)
2 medium carrots
1/3 cup corn flour to fry the tofu
3 Tbsp vegetable oil to fry the tofu
Sauce:
3 Tbsp soy sauce/ tamari sauce
3 Tbsp sweet soy sauce
1 Tbsp almond butter
1 tsp rice vinegar
1 Tbsp sesame oil
½ cup water
Sesame seeds to garnish
Instructions:
Prepare the ingredients: thinly slice the carrot, chop the capsicums and onions into 1 cm pieces, mince the garlic and grate the ginger. Cut the tofu into 1 cm cubes.
Heat a large frying pan to medium, and add vegetable oil. Cover the tofu with corn flour. Place the tofu onto the frying pan and fry for 5 minutes stirring frequently. Set aside.
In a medium bowl, combine all the ingredients for the sauce: soy sauce, sweet soy sauce, almond butter, sesame oil, water and rice vinegar.
In a large frying pan/wok, heat the oil to medium heat. Add onion, garlic and ginger. Fry for 3 minutes on medium-high heat. Add carrots and capsicum and continue frying for 3 more minutes. Add almonds, tofu and the sauce. Simmer for 5 minutes on medium heat, until the sauce has thickened.
Serve with rice and garnish with sesame seeds.
