Buddha Bowl is one of my favorite meals! It’s so easy and so satisfying. You must try this one.

🕘 10-15 minutes
Ingredients
Fresh veggies of your choice, I used:
½ red capsicum (sliced)
½ yellow capsicum (sliced)
1 small cucumber (sliced with a peeler)
1 carrot (sliced with a peeler)
Other ingredients:
½ broccoli (steamed)
1 can of chickpeas (can swap for baked tofu or beans)
250g wild rice
Garnish:
Spring onion
Black sesame seeds @realfooddirect
Satay sauce:
4 Tbsp peanut butter
3 Tbsp soy sauce
1 tsp sesame oil
1 tsp maple syrup
1 Tbsp sriracha
2 garlic cloves (diced)
2 cm ginger (grated)
3-4 Tbsp hot water
Instructions
Mix well until combined.
Chill before serving.
