Buddha Bowl


Buddha Bowl is one of my favorite meals! It’s so easy and so satisfying. You must try this one.


🍽 Serves 2

🕘 10-15 minutes


Ingredients


Fresh veggies of your choice, I used:

  • ½ red capsicum (sliced)

  • ½ yellow capsicum (sliced)

  • 1 small cucumber (sliced with a peeler)

  • 1 carrot (sliced with a peeler)


Other ingredients:

  • ½ broccoli (steamed)

  • 1 can of chickpeas (can swap for baked tofu or beans)

  • 250g wild rice


Garnish:


Satay sauce:

  • 4 Tbsp peanut butter

  • 3 Tbsp soy sauce

  • 1 tsp sesame oil

  • 1 tsp maple syrup

  • 1 Tbsp sriracha

  • 2 garlic cloves (diced)

  • 2 cm ginger (grated)

  • 3-4 Tbsp hot water


Instructions

  1. Mix well until combined.

  2. Chill before serving.

  3. Enjoy! 🌞
