Here is how to make them love broccoli – if there is someone in your family/ friend’s group that hates broccoli, this is the recipe that will change their minds! Roasted broccoli combined with cheesy hummus is simply delicious! Make sure you save this recipe and try it on that broccoli sceptic you know – we all know at least one, right? 😅


 

🍽 Serves 2 🕘 40-45 minutes Difficulty: Beginner

 

Ingredients:


  • Approx. 400g of yams/ sub for sweet potato

  • Big pinch of salt

  • 1 Tbsp extra-virgin olive oil

  • 1 large broccoli, florets

  • Approx. 200g of green beans

  • ¼ cup hemp hearts

  • 1 tsp garlic powder

  • ½ tsp onion powder

  • ¼ tsp of salt


Cheesy Hummus

  • 1 can/ 1 ½ cups of chickpeas

  • ¼ cup of nutritional yeast

  • 1 garlic clove

  • ½ tsp of salt

  • 1 tsp of onion powder

  • 1/8 tsp of chili powder

  • 2 Tbsp extra-virgin olive oil

  • 5 ice cubes


Garnish:

  • Fresh parsley and thyme


 

Instructions:


  1. Prepare the ingredients. Divide the broccoli florets, cut green beans in halves, and cut yams in halves. Preheat the oven to 200’C.

  2. Place the yams onto a baking tray. Drizzle olive oil and sprinkle salt. Place in the oven and roast for 12 minutes.

  3. Remove from the oven. Add broccoli, green beans, hemp hearts, and spices. Mix well and place in the oven. Roast for an additional 15-17 minutes – until golden and crispy.

  4. In the meantime, prepare the hummus: in a food processor, place chickpeas, nutritional yeast, garlic clove, spices, extra-virgin olive oil, and ice cubes. Blend until smooth.

  5. Remove the vegetables from the oven.

  6. Assemble the plates: spread hummus over the plate and place roasted vegetables on top.

  7. Garnish with fresh parsley and thyme.

  8. Enjoy!
