These plant-based protein bars are made of clean ingredients and take about 15 minutes to make. They are insanely delicious. The base is gooey and full of flavor, and it's finished with smooth orange-flavored chocolate. Yum! I made this batch for Nick to take to work but I might keep a few for myself – perfect for those chocolate cravings 😋
🕘 10-15 minutes
Ingredients
1 ½ cups almond butter
½ cup chopped cashews
½ cup chopped almonds
½ cup sunflower seeds
½ cup raisins
½ cup cranberries
½ cup hemp seeds @hemp.nz
Orange juice from ½ orange
½ tsp vanilla essence
3/4 cup dark chocolate (approx. 150g) I used 72% dark chocolate @whittakersnz
Zest from 1/2 orange
1 Tbsp of orange juice
¼ cup maple syrup
A pinch of sea salt
Toppings:
1/3 cup of chopped almonds
A big pinch of sea salt
Instructions
Prepare the ingredients - chop almonds and cashews, zest the orange, and squeeze the juice.
In a food processor, place almonds, cranberries, raisins, cashews, hemp seeds, chia seeds, flax seeds, and vanilla essence.
Blend until well combined.
Spread the mixture over a baking tray. I like to use baking paper and glass to even it up. Place in the fridge for the time being.
Melt the chocolate with maple syrup, orange zest, orange juice and a pinch of salt.
Pour melted dark chocolate on top of the chilled base and spread evenly. Sprinkle with chopped almonds and sea salt.
Place in the freezer for 1+ hours to let it set. Move to the fridge and store it in the fridge.
Enjoy! 💚
