Grilled Corn with Guacamole and Vegan Bacon

Freshly charred corn covered with delicious guacamole and my favorite vegan bacon. Now, that's pure summer☺️

What's your favorite summer dish?

🍽 Serves 2-3

🕘 25-30 minutes


  • 4 corn cobs

  • 1 tsp olive oil

  • Pinch of salt

  • 4 avocadoes

  • 2 tomatoes

  • 1/3 cup chopped coriander

  • ½ diced yellow onion

  • Juice from 1 lemon

  • Salt, pepper

  • ½ tsp olive oil

  • Plant-based bacon @sunfedmeats – I used ½ pack, chopped into 0.5cm pieces


  1. Start with preparing all the ingredients: chop the plant-based bacon, tomatoes, and coriander, dice the onion, mash the avocadoes.

  2. Heat the grill pan to medium heat. Spread evenly olive oil. Place corn cobs and grill for 3-4 minutes on each side until soft and charred all over. Sprinkle with salt.

  3. In the meantime, prepare the guacamole: In a bowl, place the avocadoes, tomatoes, onion coriander. Add lemon juice, salt, and pepper. Mix well until combined. Taste and add more lemon juice, salt, or pepper if needed.

  4. Heat and oil a medium-sized frying pan, place the bacon and fry for 4-5 min, stirring frequently.

  5. Assemble the plate: place corn cobs, place guacamole on the cobs. Sprinkle with bacon.
