Stuffed Bell Peppers for Halloween


It’s Halloween in our kitchen tonight. You must try these amazing stuffed capsicums/bell peppers. They are easy to make, kids friendly and so yummy.


🍽 Serves 2-3

🕘 40-45 minutes


Ingredients

  • 3 large capsicums

  • 1 tsp olive oil to brush capsicums


Filling:

  • 1 Tbsp olive oil

  • 1 Onion (diced)

  • 1 block firm plain tofu @beansupremefood

  • 1 Tbsp tomato paste

  • 1 Tbsp soy sauce

  • 1 cup passata

  • 2 Tbsp taco seasoning @farrahsnz

  • ½ cup sweet corn


Cheese:

  • 1 block silken tofu

  • ½ cup nutritional yeast @realfooddirect

  • ½ tsp onion powder

  • ½ tsp garlic powder

  • ½ tsp turmeric

  • 2 Tbsp apple cider vinegar

  • ½ cup tapioca

  • 1 tsp salt

  • 1/2 cup water


Instructions

  1. Preheat the oven to 180’C. Carve capsicums. Brush with olive oil and sprinkle with salt. Roast capsicums for 30 min or until soft.

  2. Heat up olive oil. Add onion, minced tofu, tomato paste, soy sauce, passata, taco seasoning and sweet corn. Mix well and simmer for 5 min.


Cheese:

  1. Place all the ingredients in a blender. Blend until smooth. Place in a saucepan and heat up for 4-5min until cheesy texture.

  2. Place the filling inside capsicums and top with cheese. Enjoy! 👻🎃👻
