Fresh, tangy, and full of herby goodness - this Herbed Potato Salad is the perfect side for any meal. With crisp apple bites and a sweet maple-Dijon dressing, it’s refreshing and satisfying, best enjoyed chilled on a sunny day or alongside your favorite dishes.
🍽 Serves 4-5 🕘 30-35minutes Difficulty: Beginner
Ingredients:
5 cups cooked potatoes (best if small)
1 cup chopped chives
¼ cup chopped parsley
1 medium apple (diced)
½ red onion (diced)
Sauce:
¼ cup Dijon mustard
3 Tbsp maple syrup
2 Tbsp hemp oil/ extra-virgin olive oil
1 Tbsp apple cider vinegar
Salt and ground black pepper to taste
Instructions:
Scrub the potatoes and cut them into small (1-2 cm pieces) and cook until soft.
Chop chives, parsley, apple, and red onion.
Let the potatoes cool down.
In a small bowl combine all the ingredients for the dressing.
In a large bowl, place the potatoes, chives, parsley, and red onion. Pour the sauce and mix well until fully combined.
Serve chilled.
