Fresh, tangy, and full of herby goodness - this Herbed Potato Salad is the perfect side for any meal. With crisp apple bites and a sweet maple-Dijon dressing, it’s refreshing and satisfying, best enjoyed chilled on a sunny day or alongside your favorite dishes. 


🍽 Serves 4-5 🕘 30-35minutes Difficulty: Beginner


Ingredients:


  • 5 cups cooked potatoes (best if small)

  • 1 cup chopped chives

  • ¼ cup chopped parsley

  • 1 medium apple (diced)

  • ½ red onion (diced)


Sauce:


  • ¼ cup Dijon mustard

  • 3 Tbsp maple syrup

  • 2 Tbsp hemp oil/ extra-virgin olive oil

  • 1 Tbsp apple cider vinegar

  • Salt and ground black pepper to taste



Instructions:


  1. Scrub the potatoes and cut them into small (1-2 cm pieces) and cook until soft.

  2. Chop chives, parsley, apple, and red onion.

  3. Let the potatoes cool down.

  4. In a small bowl combine all the ingredients for the dressing.

  5. In a large bowl, place the potatoes, chives, parsley, and red onion. Pour the sauce and mix well until fully combined.

  6. Serve chilled.

  7. Enjoy!
