Homemade Falafel Mix

I love shortcuts and this is one of the best that I mastered during my university days. This delicious homemade falafel mix takes about 15 minutes to make, you can store it for weeks and it’s so handy on those days when you have no time to cook but still want to have something healthy, nutritious, and yummy. It’s perfect for lunch boxes too.

🕘 25 minutes

Ingredients

  • 4 cups of dried chickpeas @realfooddirect

  • 1 cup of sesame @realfooddirect

  • 1 Tbsp salt

  • 3 Tbsp cumin seeds/powder

  • 2 Tbsp onion powder

  • 2 Tbsp dried parsley

  • 1 Tbsp dried coriander

  • 1 Tbsp sweet paprika

  • 1 Tbsp coriander powder

  • 1 tsp turmeric powder

  • 1 tsp cinnamon

  • 1 tsp black pepper

Instructions

  1. Place chickpeas into a food processor and blend. It’s good to leave some chunky bits for the texture.

  2. Add all the rest of the ingredients and blend for a few more seconds to combine them.

  3. Store in an airtight container in your pantry (at room temperature)

  4. To make the falafels (this quantity makes 8 falafels): Combine 1 ½ cups of falafel mix with 1/2 cup boiling water, ¼ cup of olive oil, and 2 Tbsp lemon juice. Set aside for 30+ minutes to thicken.

  5. Add 2 Tbsp of chopped parsley (optional)

  6. Preheat the oven to 190’C. Put a little bit of olive oil on your hands, scoop out about 2 tablespoons of the falafel mix and shape it into small patties.

  7. Place them on a baking sheet and bake for 25 minutes, flip them halfway through to make sure they bake evenly.

  8. Enjoy! 💚

My Mediterranean falafel bowl contains rocket, curly parsley, red onion, sundried tomatoes, olives, lemon, falafels, and creamy garlic parsley sauce.
