How to make Tofu Scramble


This is the best tofu scramble I have ever had. It’s not too dry but also not too runny.

It has this perfect egg-like texture, and a beautiful flavor. Yum! I absolutely love it! I'm sure you will too! 👌🏻


🍽 Serves 3-4

🕘 20 minutes



Ingredients:

  • 1 tsp vegan butter

  • ½ yellow onion (diced)

  • 1 block of firm tofu

  • 1 Tbsp nutritional yeast

  • ½ tsp garlic powder

  • ½ tsp turmeric

  • 1 tsp Dijon mustard

  • 1 Tbsp vegan mayo

  • 1 block of silken tofu

  • 2 Tbsp chopped chives

  • Salt and pepper to taste


Toppings:

  • More chopped chives

  • A mix of seeds (I used my Everything Avo Toast Seasoning)

  • Kala namak (optional)


Serve with:

  • Sauteed spinach

  • Fried tomatoes

  • Bread of your choice


Instructions:

  1. Prepare all the ingredients.

  2. Heat the butter on medium heat. Add onion and fry until fragrant and translucent.

  3. Crumble firm tofu with your hand and add it to the pan. Add nutritional yeast, turmeric, mustard vegan mayo, and garlic powder. Cook for 3-4 min.

  4. Crumble silken tofu and add it to the pan. Mix in until combined. Sprinkle with salt and pepper to taste. Add chopped chives.

  5. Serve topped with some extra chives, a mix of seeds, and kala namak if desired.
