Laksa inspired Noodle Soup

This fresh and sweet immunity-boosting noodle soup takes only 30min to make. Save this recipe for later.
š½Ā Serves 4-5 š 45-50 minutes Difficulty: Beginner
Ingredients:
½ tsp olive oil
2 medium onions
6 cloves of garlic
3 cm ginger
1 tsp turmeric
¼ tsp curry powder
Pinch of cracked pepper
1 large zucchini (my zucchini was yellow but green regular zucchini is perfect)
2 medium carrots
1 ½ cups cooked lentils/ 1 can lentils
2-3 cups boiling hot water (enough to cover the vegetables)
2 cans chopped tomatoes
1 can coconut cream
1 cup cherry tomatoes (cut in halves)
Fresh basil
Sesame seeds
Penang laksa noodles/rice noodles
Instructions:
Prepare all the ingredients. Dice onion and garlic. Grate ginger. Chop carrot and zucchini into small cubes.
In a large pot, heat the oil. Add onion, garlic, and ginger. SautƩ for 3 min. Add turmeric, curry powder and cracked pepper, and stir.
Add lentils, carrots, and zucchini. Pour boiling hot water ā enough to cover the vegetables. Bring to boil and simmer for 15 min.
Add chopped tomatoes and coconut cream. Simmer for another 10 min.
Cook laksa/ rice noodles according to the packaging.
Taste and add salt and pepper
Serve topped with cherry tomatoes, basil, and sesame seeds.
