Mediterranean Pasta Salad

This is my mum’s pasta salad, it’s so easy and quick to make and so yum! Ready in 20 minutes nutritious and so delicious.

  • 1 ½ cups of farfalle pasta

  • 1 cup of sliced sundried tomatoes

  • 1 cucumber (approx.1 ½ cups of chopped cucumber)

  • ½ cup of black olives

  • ½ cup of kalamata olives (or substitute for ½ cup of black olives)

  • A big handful of fresh basil

Easy vinaigrette dressing:

  • 2 Tbsp of balsamic vinegar

  • 2 Tbsp of maple syrup

  • 1 Tbsp extra virgin olive oil

  • Salt, pepper


  1. Cook pasta according to the packaging instructions. Rinse the pasta – it stops the cooking process and pasta doesn’t stick together.

  2. Prepare the ingredients: chop the cucumber, and slice the tomatoes.

  3. Let the pasta cool down before mixing it with vegetables.

  4. In the meantime, prepare the dressing: in a small jar, pour balsamic vinegar, maple syrup, olive oil, salt and pepper. Place the lid on and shake until well combined.

  5. In a large bowl, place: cold pasta, chopped cucumbers, sundried tomatoes, olives, and basil.

  6. Pour vinaigrette dressing over the salad and mix well.

  7. Sprinkle some vegan parmesan on top.

  8. Enjoy! 💚

Notes: Add 1 cup of chickpeas for more protein.
