Ingredients:
2 cans of 4 beans
1 red onion, sliced
½ telegraph cucumber, sliced
1 red capsicum, sliced
3 cups of shredded cabbage, I used purple and green
Dressing:
1/3 cup of your favorite peanut butter
Juice from 1 lemon
2 Tbsp of water
½ tsp of oregano
Salt and black pepper to taste
Instructions:
Prepare the ingredients. Shred the cabbage, slice the cucumber, capsicum/bell pepper, and red onion. Drain and rinse the beans.
Prepare the dressing, in a medium cup/bowl combine peanut butter, lemon juice, water, oregano and salt and pepper to your preference.
Assemble the salad: in a large bowl place chopped vegetables. Toss to combine and add the dressing. Incorporate the dressing and serve.
