Pickled Red Onion

Avocados are back in season in New Zealand and I'm back to obsessing over avocado toasts - daily! This pickled red onion is a game changer though. It's such a quick and simple recipe and brings so much flavor. Add it to your avocado toasts, salads and veggie bowls.


šŸ½Ā Makes 1 jarĀ Ā  šŸ•˜Ā 10 minutes Difficulty: Beginner


Ingredients:


  • 3 medium red onions

  • ½ cup of apple vinegar

  • ½ cup of water

  • ½ tsp salt

  • 1 tsp raw sugar



Instructions:


  1. Prepare the ingredients. Thinly slice the onions

  2. In a saucepan, combine water, apple cider vinegar, salt and sugar. Bring to boil and switch the element off

  3. Place sliced onion in a 200ml jar and press well

  4. Fill up the jar with hot vinegar mixture and place the lid on

  5. Leave to cool and then refrigerate for at least 3 hours.

  6. Use on sandwiches, in salads and buddha bowls

  7. Enjoy!
