Quick and Easy Tomato Penne Pasta

This pasta is a wholesome dish perfect for busy weeknights. Ready in just 25 minutes, this beginner-friendly recipe combines hearty lentils, crunchy walnuts, and a medley of fresh and canned tomatoes to create a rich, flavorful sauce. Finished with fragrant herbs, sweet cherry tomatoes, and fresh basil, it’s a satisfying plant-based meal that serves 4–5 with ease.

Ingredients:
1 tsp olive oil
400 g penne pasta
1 medium onion
3 cloves of garlic
1 can lentils
1 Tbsp bell pepper flakes
½ Tbsp oregano
2 medium tomatoes
1 tsp red wine vinegar
1 tsp raw sugar
1 cup of chopped walnuts
1 can of diced tomatoes
1 can of whole tomatoes
½ tsp salt
¼ tsp pepper
1 cup cherry tomatoes
Fresh basil to serve
Instructions:
Prepare the ingredients: mince the garlic, dice the onion, and chop the tomatoes and walnuts.
Heat a large frying pan to medium, pour olive oil, and add onion and garlic. Sauté for 3 minutes. Add bell pepper flakes, oregano, raw sugar, and red wine vinegar. Mix well and sauté for 2 more minutes.
Cook the pasta according to the packaging.
Add lentils and walnuts and mix well. Sauté for 3 minutes. Add fresh and canned tomatoes, salt, and pepper. Mix well and simmer on medium-low heat for 15 minutes.
Drain the pasta and add it to the sauce.
Serve with cherry tomatoes and fresh basil.
