This vibrant quinoa bowl is one of those meals you’ll never get tired of - nourishing, satisfying, and packed with wholesome ingredients that make you feel amazing after every bite. Perfect for batch cooking, it’s loaded with roasted sweet potatoes, crunchy walnuts, fresh spinach, tart cranberries, and protein-rich chickpeas, all brought together with a creamy, zesty tahini dressing. Whether you’re meal prepping or just craving something colorful and delicious, this bowl is pure comfort in every forkful.


🍽 Serves 3-4 🕘 25 minutes Difficulty: Beginner


Ingredients:


  • 1 cup quinoa

  • 2 cups water

  • 1 cup walnuts

  • 1 cup cranberries

  • 2 handfuls of spinach

  • 2 Tbsp hemp seeds

  • 1 sweet potato (roasted)

  • 1 Tbsp olive oil

  • 1 tsp salt

  • 1 cup chickpeas

  • 2 apples (sliced)


Tahini dressing:


  • 1 cup chickpeas

  • 2 heaped Tbsp tahini

  • ½ peeled lemon

  • 1 garlic clove

  • ½ Tbsp cumin powder

  • 1/2 tsp salt

  • 1/2 - 3/4 cup cold water (depending on how thick you like your dressing)



Instructions:


  1. Preheat the oven to 180’C.

  2. Prepare the ingredients.

  3. Rinse and cook the quinoa

  4. Place chopped sweet potato in a bowl, add olive oil and salt and mix well. Move them into a baking tray and roast for 30min. Stir halfway through.

  5. In a food processor, place chickpeas, tahini, lemon, garlic, cumin, salt, and cold water. Blend until smooth.

  6. Assemble in a large bowl: place quinoa, spinach, sweet potatoes, chickpeas, cranberries, walnuts.

  7. Pour the dressing and top with hemp seeds.

  8. Enjoy!
