Quinoa Bowl


A bowl of goodness and happiness 😊

It’s one of those meals that I never get bored of and feel wonderful after eating it.

It's also perfect for batch cooking. Lunch sorted for 3 days 😉


🍽 Serves 3-4

🕘 5 minutes


Ingredients

  • 1 cup quinoa

  • 2 cups water

  • 1 cup walnuts

  • 1 cup cranberries

  • 2 handfuls of spinach

  • 2 Tbsp hemp seeds @hemp.nz

  • 1 sweet potato (roasted)

  • 1 Tbsp olive oil

  • 1 tsp salt

  • 1 cup chickpeas

  • 2 apples (sliced)


Tahini dressing:

  • 1 cup chickpeas

  • 2 heaped Tbsp tahini

  • ½ peeled lemon

  • 1 garlic clove

  • ½ Tbsp cumin powder

  • 1/2 tsp salt

  • 1/2 - 3/4 cup cold water (depending on how thick you like your dressing)


Instructions

  1. Preheat the oven to 180’C.

  2. Prepare the ingredients.

  3. Rinse and cook the quinoa

  4. Place chopped sweet potato in a bowl, add olive oil and salt and mix well. Move them into a baking tray and roast for 30min. Stir halfway through.

  5. In a food processor, place chickpeas, tahini, lemon, garlic, cumin, salt, and cold water. Blend until smooth.

  6. Assemble in a large bowl: place quinoa, spinach, sweet potatoes, chickpeas, cranberries, walnuts.

  7. Pour the dressing and top with hemp seeds.

  8. Enjoy!
