Romesco-inspired Hummus

Aromatic and packed with flavor, ready in 20 minutes romesco sauce-inspired hummus.


  • 5 roasted bell peppers (from a jar)

  • 1 large or 2 medium grilled tomatoes

  • 1/3 cup blanched toasted almonds

  • 1 cup chickpeas

  • 1 clove of garlic (optional)

  • 1 tsp smoked paprika

  • 1 Tbsp red wine vinegar

  • ¼ cup of sundried tomato oil or extra virgin olive oil

  • ½ tsp of salt


  • 1 Tbsp Chopped toasted almonds

  • 1 Tbsp Chopped roasted bell pepper

  • 1 tsp chopped parsley


  1. Prepare the ingredients: Cut the tomatoes into thick slices and quickly grill them on both sides on high heat. Remove from the grill pan and set aside to cool.

  2. In a food processor place: roasted bell peppers, grilled tomatoes, blanched almonds, chickpeas, garlic, smoked paprika, red wine vinegar, sundried tomato oil/extra virgin olive oil, and salt. Blend until it reaches desired texture.

  3. Transfer the hummus to a medium bowl, and top with chopped almonds, roasted bell pepper, and chopped parsley.

  4. Serve chilled with your favorite crackers, pita bread, and fresh vegetables.

  5. Enjoy! 😊

Notes: This recipe is also a great base for pasta or risotto.

Add some chili flakes if you want this hummus to have a nice spicy kick 👌🏻
