Smoky Carrot Spread

I always keep a homemade spread in the fridge, and this smoky carrot spread is one of my all-time favorites. It’s packed with rich, smoky flavor and a lovely creamy texture - perfect for sandwiches, wraps, or as a dip. Pair it with your favorite crackers or breadsticks, and you’re set for a delicious snack or light meal!
🍽 Serves 2-3 🕘 35-40 minutes Difficulty: Beginner
Ingredients:
3 carrots
1 Tbsp olive oil to roast the carrots
½ tsp smoked paprika
1/2 cup of fresh parsley
½ can chickpeas
2 Tbsp hemp oil
1 garlic clove
1 tsp apple cider vinegar
5 sundried tomatoes
½ tsp sweet paprika
2 Tbsp water
If you serve it as a dip, top it with:
Roasted sunflower seeds
Parsley
Oil of your choice, I used hemp oil
Instructions:
Preheat the oven to 220’C.
Wash the carrots. Cut them into cubes (see video).
Place the carrots in a bowl, add olive oil, smoked paprika, salt and pepper. Mix well.
Transfer the carrots onto a baking tray and bake for 25 min.
Remove the carrots from the oven and let them cool down.
In a food processor, place: carrots, parsley, chickpeas, garlic clove, sundried tomatoes, hemp oil, apple cider vinegar, sweet paprika. Blend until smooth.
Place in an airtight container. Lasts up to 7 days.
