Smoky Carrot Spread


I love to always have a homemade spread in the fridge. I use it to make delicious sandwiches, wraps, as a dip, options are endless. This smoky carrot spread is one of my favorites. It has so much flavor and character. Pair it with your favorite crackers or breadsticks and you are in heaven.

šŸ•˜ 35-40 minutes


Ingredients

  • 3 carrots

  • 1 Tbsp olive oil to roast the carrots

  • Ā½ tsp smoked paprika

  • 1/2 cup of fresh parsley

  • Ā½ can chickpeas

  • 2 Tbsp hemp oil @hemp.nz

  • 1 garlic clove

  • 1 tsp apple cider vinegar @ceresorganics

  • 5 sundried tomatoes

  • Ā½ tsp sweet paprika

  • 2 Tbsp water


If you serve it as a dip, top it with:

  • Roasted sunflower seeds @realfooddirect

  • Parsley

  • Oil of your choice, I used hemp oil

Instructions

  1. Preheat the oven to 220ā€™C.

  2. Wash the carrots. Cut them into cubes (see video).

  3. Place the carrots in a bowl, add olive oil, smoked paprika, salt and pepper. Mix well.

  4. Transfer the carrots onto a baking tray and bake for 25 min.

  5. Remove the carrots from the oven and let them cool down.

  6. In a food processor, place: carrots, parsley, chickpeas, garlic clove, sundried tomatoes, hemp oil, apple cider vinegar, sweet paprika. Blend until smooth.

  7. Place in an airtight container. Lasts up to 7 days.
