Summer Rolls

These summer rolls are the perfect bite of freshness and crunch-bursting with vibrant flavors and textures! Quick to make and naturally gluten-free, they’re ideal for light lunches or party appetizers. The creamy tofu spread paired with grilled zucchini and vegan bacon takes these rolls to the next level. Trust me, once you try them, they’ll become your go-to summer snack!
🍽 Serves 2-3 🕘 25-30 minutes Difficulty: Beginner
Ingredients:
2 courgettes/ zucchinis (finely sliced)
Vegan bacon
½ block of firm tofu
½ tsp garlic powder
½ tsp onion powder
½ tsp salt
1 Tbsp nutritional yeast
3 Tbsp plant-based milk (add more if too thick)
7-8 sundried tomatoes (diced)
½ bunch of chives – approx. 3 Tbsp (diced)
2 Tbsp olive oil for grilling
Instructions:
Prepare the ingredients. Preheat the skillet grill pan with olive oil.
Grill sliced zucchini for approx. 3 min on each side. Add cracked salt and pepper
Grill strips of vegan bacon on both sides.
To make the cream cheese: In a food processor, place: firm tofu, garlic and onion powders, nutritional yeast, salt, and plant-based milk.
Add sundried tomatoes and chives to the cream cheese and mix well until combined.
Assemble the rolls: place zucchini, bacon, spread cream cheese and roll from thin to thick side.
Cool in the fridge for 15 minutes before serving.
