Superfood Smoothie Bowl

Start your morning with this energizing superfood smoothie bowl! Packed with protein-rich quinoa, antioxidant-loaded berries, and creamy coconut milk, it’s a delicious and nourishing way to fuel your day.
🍽 Serves 2 🕘 25 minutes Difficulty: Beginner
Ingredients:
½ cup uncooked quinoa
1 cup of water to cook quinoa
1 cup of frozen berries (I used strawberries, blackberries, and blueberries)
1 frozen banana
1/2 tsp ground cinnamon
1 tsp vanilla extract
1 cup of coconut milk (sub for other plant milk)
2-3 dates (optional, for sweetness)
My toppings:
½ banana (sliced)
Fresh strawberries (sliced in half)
Hemp hearts
Goji berries
Instructions:
Cook the quinoa and let it cool. (I like to cook a bigger batch and store it in an airtight container in the fridge.)
In a high-speed blender, place: quinoa, frozen berries, frozen banana, cinnamon, vanilla extract, and coconut milk. Blend until smooth.
Serve immediately topped with your favourite fruits and toppings. I used bananas, strawberries, hemp hearts, and goji berries.
