Creamy Sweet Potato (Kūmara) Soup

This smooth and creamy sweet potato soup has a gentle kick of spice to warm your soul on a chilly night. Topped with crispy plant-based chorizo and fresh coriander, it’s the kind of comfort food that feels like a warm hug - simple, hearty, and full of flavor.
🍽 Serves 4-5 🕘 40-45 minutes Difficulty: Beginner
Ingredients:
½ Tbsp olive oil
4 cups chopped sweet potatoes/ kūmara (approx. 2 large)
3 cups vegetable stock
1 onion (diced)
3 cloves of garlic (minced)
½ tsp sweet paprika
¼ tsp smoked paprika
½ tsp cumin seeds
1 tsp bell pepper flakes
Salt and pepper to taste
Plant-based spicy chorizo (optional)
Olive oil to fry
Coriander to garnish
Instructions:
Prepare the ingredients: chop the potatoes, dice the onion and mince or dice the garlic.
In a large pot, heat the oil to medium, add onion and sauté for 3 minutes. Add garlic and sauté for 3 more minutes. Add spices and mix well. Add sweet potatoes and fry for 5 minutes stirring occasionally.
Pour vegetable stock. Simmer for 30 minutes.
In the meantime, slice plant-based chorizo. In a large frying pan, heat the oil and place the chorizo, fry and stir occasionally for approx. 7 minutes.
Remove the soup from the heat. Blend until smooth and add salt and pepper to taste.
Serve topped with fried chorizo. Garnish with fresh coriander.
