Vegan Black Bean Noodles with Pepper Tofu and Veggies

These noodles are a total flavor bomb - sweet, spicy, and perfectly crunchy! Crispy tofu cubes coated in cornflour add amazing texture, while garlic, ginger, and soy sauces create a deliciously savory sauce that ties it all together. Tossed with tender veggies and black bean noodles, this dish is super satisfying and easy to whip up any night of the week. Get ready to fall in love with every bite!

Ingredients:
1 block of firm tofu
2 Tbsp cornflour
1 Tbsp oil
10 garlic cloves (diced)
2 cm ginger (grated)
2 carrots
1 cup green beans
1 ½ Tbsp freshly cracked pepper
3 Tbsp sweet soy sauce
3 Tbsp dark soy sauce
2 Tbsp raw sugar
½ cup chives
200g black bean noodles
1 tsp vegetable stock/ 1 cube
Instructions:
Press the tofu. Prepare all the ingredients. Peel the carrots, grate the ginger, dice the garlic.
Cut the carrots in 4. Slice lengthwise. (See video)
Cut beans into 2 cm long pieces. (See video)
Cut tofu into 1 cm cubes.
In a medium-size bowl, place cornflour and the tofu. Mix well.
In a large frying pan/wok heat up the oil. Place the tofu and fry until golden. Stir frequently. Remove and set aside.
On the same frying pan, place the ginger and garlic. Fry until golden. Add carrots and green beans. Fry for another 5 min. Add pepper, soy sauces, sugar. Stir well until combined. Cook the noodles according to the instructions on the packaging.
Add the noodles, tofu, and chives.
Serve immediately. Add more freshly cracked pepper if desired.
