Ingredients:
Blueberry compote:
2 cups of fresh or frozen blueberries
¼ cup of water
1 Tbsp maple syrup
1 tsp lemon juice
Waffles:
2 cups rolled oats
½ pack of silken tofu
1 ½ cups of plant milk
1 Tbsp extra virgin olive oil
1 Tbsp brown sugar
¼ tsp cinnamon
1 tsp vanilla essence
¼ tsp salt
Vegan butter
Fresh blueberries
Maple syrup
Fresh mint
Instructions:
To make the compote: In a saucepan, place blueberries, water and maple syrup, and lemon juice. Bring to simmer. Cook for about 10 minutes, until the mixture has reduced and thickened.
In the meantime, in a blender, place oats, silken tofu, plant milk, olive oil, brown sugar, cinnamon, vanilla essence, and salt. Blend until smooth.
Brush the waffle iron with oil, and cook waffles until light brown and crispy, approx. 10 min.
Remove from the waffle iron and serve with blueberry compote, fresh blueberries, vegan butter, and maple syrup. Garnish with fresh mint (optional).
