Vegan Curried "Egg" Sandwich


Sandwich lovers, here is a delicious vegan veggie-packed sammie for you.

I love it more than I did the real egg version of it. šŸ˜


šŸ½ Serves 4-5

šŸ•˜ 10-15 minutes


Ingredients

  • 1 can chickpeas/ 1 Ā½ cups cooked chickpeas

  • 2 Tbsp olive oil

  • Ā½ tsp mustard

  • 1 tsp curry powder

  • Ā¼ tsp turmeric

  • Ā¼ tsp salt

  • Cracked pepper to taste

  • 4-5 ice cubes (optional)

  • Spinach, tomato, avocado

Instructions

  1. Prepare all the ingredients.

  2. In a food processor, place all the ingredients and blend until your desired texture. If you want it chunky, skip the ice cubes and only pulse a few times.

  3. Assemble the sandwich: Spread evenly the curried "eggā€ on one side of the bread slice, add spinach, tomato, and avocado. Top with a slice of bread. Cut in half and enjoy!

  4. Store in an airtight container in the fridge for up to 5 days.
