Vegan Curried "Egg" Sandwich

Sandwich lovers, here is a delicious vegan veggie-packed sammie for you.

I love it more than I did the real egg version of it. 😍

🍽 Serves 4-5

🕘 10-15 minutes


  • 1 can chickpeas/ 1 ½ cups cooked chickpeas

  • 2 Tbsp olive oil

  • ½ tsp mustard

  • 1 tsp curry powder

  • ¼ tsp turmeric

  • ¼ tsp salt

  • Cracked pepper to taste

  • 4-5 ice cubes (optional)

  • Spinach, tomato, avocado


  1. Prepare all the ingredients.

  2. In a food processor, place all the ingredients and blend until your desired texture. If you want it chunky, skip the ice cubes and only pulse a few times.

  3. Assemble the sandwich: Spread evenly the curried "egg” on one side of the bread slice, add spinach, tomato, and avocado. Top with a slice of bread. Cut in half and enjoy!

  4. Store in an airtight container in the fridge for up to 5 days.
