Vegan Curried Sausages

A plant-based take on the classic Aussie comfort food! This bowl of creamy curried sausages, crispy roasted potatoes, and tender veggies is pure nostalgic goodness - perfect for chilly evenings or whenever you’re craving something hearty and satisfying.


🍽 Serves 3-4 🕘 45-50 minutes Difficulty: Beginner


Ingredients:


  • 1 Tbsp extra virgin olive oil

  • 1 pack of vegan sausages (sliced)

  • 1 onion (diced)

  • 2 garlic cloves (diced)

  • 1 Tbsp curry powder

  • 1 cup vegetable stock

  • 3 Tbsp coconut yoghurt

  • 1 tsp raw sugar

  • 1 cup thawed peas

  • 1 carrot (chopped)

  • 3-4 potatoes (chopped into 1cm cubes)

  • 1 tsp salt



Instructions:


  1. Preheat the oven to 200’C. Prepare all the ingredients.

  2. In a bowl, place the potatoes, oil and salt and mix well. Place them on a baking tray. Roast for 12 min, stir, and roast for another 10min.

  3. In a large saucepan, heat up the oil. Add onions and garlic. Fry until golden. Add the sausages. Fry for 6-7min.

  4. Add carrots, peas and curry. Mix until combined and fry for 2-3min. Add vegetable stock, coconut yoghurt and sugar. Mix well.

  5. Serve in a bowl with potatoes.

  6. Enjoy!
