Vegan Curried Sausages

A plant-based take on the classic Aussie comfort food! This bowl of creamy curried sausages, crispy roasted potatoes, and tender veggies is pure nostalgic goodness - perfect for chilly evenings or whenever you’re craving something hearty and satisfying.
🍽 Serves 3-4 🕘 45-50 minutes Difficulty: Beginner
Ingredients:
1 Tbsp extra virgin olive oil
1 pack of vegan sausages (sliced)
1 onion (diced)
2 garlic cloves (diced)
1 Tbsp curry powder
1 cup vegetable stock
3 Tbsp coconut yoghurt
1 tsp raw sugar
1 cup thawed peas
1 carrot (chopped)
3-4 potatoes (chopped into 1cm cubes)
1 tsp salt
Instructions:
Preheat the oven to 200’C. Prepare all the ingredients.
In a bowl, place the potatoes, oil and salt and mix well. Place them on a baking tray. Roast for 12 min, stir, and roast for another 10min.
In a large saucepan, heat up the oil. Add onions and garlic. Fry until golden. Add the sausages. Fry for 6-7min.
Add carrots, peas and curry. Mix until combined and fry for 2-3min. Add vegetable stock, coconut yoghurt and sugar. Mix well.
Serve in a bowl with potatoes.
