Vegan Feijoa Apple Shortcake

Delightfully fresh and bursting with flavor, this Vegan Feijoa Apple Shortcake is a sweet treat you won’t want to stop eating. Soft, crumbly, and packed with juicy fruit, it’s the perfect cozy dessert for any occasion.
🍽 Serves 6 🕘 1h Difficulty: Beginner
Ingredients:
2 ½ cups flour
1 cup brown sugar
1 cup vegan butter
½ Tbsp baking powder
1 Tbsp ground flax seed
3 Tbsp water
¼ cup coconut yoghurt
2 ½ cups feijoa
3 medium apples (approx. 2 cups)
½ Tbsp cornflour
½ tsp cinnamon
¼ tsp ginger powder
¾ cup rolled oats
Instructions:
In a small bowl combine ground flaxseed with water and set aside for 10-15min – until thick and egg-like texture.
In a large bowl, combine flour and cold butter, using your fingers.
Add brown sugar, baking powder, flax mixture, and coconut yoghurt. Mix well. Place in the fridge for the time being.
Prepare the filling. Scoop the inside of the feijoas, peel and chop the apples into 1cm cubes. In a medium bowl, place the feijoas and using a fork, mash the fruit until marmalade texture. Add apples, cinnamon, and ginger powder. Mix well. Add cornflour and mix once again.
Preheat the oven to 180’C. In a baking tray, place 2/3 of the dough, cover with baking paper and using your hands or a glass spread the dough evenly. Remove the baking paper from the dough.
Pour the filling and spread it over the dough.
Crumb the remaining dough and spread it over the filling. Gently press the crumbs. Place the oats on top.
Bake for 40 min.
Remove from the oven and let it cool down.

This recipe can be used for other fruits such as apples, pears and berries.
