This Plum Galette recipe is a delicious and vegan-friendly dessert that showcases the natural sweetness of ripe plums. The addition of almond butter and flax seeds adds richness and texture to the crust, while the cinnamon and fig jam enhance the flavor of the plums. Topped with sliced almonds and hemp hearts, this galette is not only beautiful, but also packed with protein and nutrients. This recipe contains 7 grams of protein per serving.

Ingredients:


Crust:

  • 1 cup of wholemeal flour

  • ½ cup of high-grade flour

  • ½ cup of cold vegan butter

  • 1 Tbsp of ground flax seeds

  • 3 Tbsp of water

  • 1 heaped Tbsp almond butter

  • 1 tsp vanilla extract

  • 1 Tbsp raw sugar

  • ¼ tsp of salt


  • ½ cup fruit jam (I used fig jam)


  • 7-8 ripe plums

  • ½-1 tsp cinnamon


Toppings:

  • 1/4 cup of sliced almonds

  • 2 Tbsp hemp hearts


 

Instructions:


  1. In a large mixing bowl, combine the wholemeal flour, high-grade flour, raw sugar, and salt. Mix well.

  2. Add the cold vegan butter to the dry ingredients. Using your hands or a pastry cutter, cut the butter into the flour mixture until it resembles coarse crumbs.

  3. In a separate small bowl, mix together the ground flax seeds and water. Let it sit for 2-3 minutes until it thickens and becomes gel-like.

  4. Add the flax seed mixture, almond butter, and vanilla extract to the flour mixture. Mix until the dough comes together. If the dough seems too dry, add a little more water, one tablespoon at a time, until it forms a ball. Wrap the ball in a cling wrap and place in the freezer for the time being.

  5. Cut the plums into thin slices, discarding the pits. Place the plums in a bowl and incorporate cinnamon.

  6. Transfer the crust onto a baking tray lined with baking paper. Roll it out into a circle, about 25 cm wide.

  7. Spread the jam evenly over the center of the dough, leaving a 2 cm border around the edges.

  8. Fold the edges of the dough over the plums, gently pressing to seal any cracks.

  9. Brush the edges of the galette with water and sprinkle the galette with sliced almonds and hemp hearts on top.

  10. Place the galette in the oven (190'C), and bake for 35-40 minutes, or until the crust is golden brown..

  11. Remove from the oven and let it cool for a few mins.
