Vegan Mince Tacos


These vegan mince tacos are a perfect quick weeknight dinner to enjoy with family. They take approx. 20 minutes to make and are so tasty.

Ingredients

  • 1 Tbsp olive oil

  • ½ medium onion – diced

  • 1 pack of vegan mince (300g) – I used @plantfoodsnz

  • ½ tsp chili powder

  • ¼ tsp garlic powder

  • ½ tsp dried oregano

  • 1 tsp cumin

  • 1 Tbsp bell pepper flakes

  • 1 Tbsp tomato paste

  • 1 tsp raw sugar

  • Salt and pepper to taste



Pico de gallo:

  • 1 tomato (diced)

  • ½ red onion (diced)

  • Coriander (diced)

  • 1 Tbsp lime juice


  • 1 avocado chopped

  • Chipotle sauce (La Morena)

  • Fresh coriander to serve


Instructions

  1. Prepare the ingredients, dice the onion.

  2. In a large frying pan, heat the oil to medium, add onion and fry until golden and fragrant.

  3. Add vegan mince and using a spatula break it into small pieces. Add all the spices: chili powder, oregano, cumin, garlic powder, bell pepper flakes, raw sugar and tomato paste. Mix well and fry for approx. 6-7 minutes – until brown. Add salt and pepper to taste.

  4. In the meantime, make pico de gallo: in a medium bowl, combine chopped tomato, red onion, coriander, and lime juice. Add salt and pepper to taste.

  5. Heat tortillas and assemble the taco: spread vegan aioli over the tortilla, and place the mince. Add spinach, chopped avocado, pico de gallo, chipotle sauce and some more coriander.
