Impress your guests over this Christmas with this delicious Vegan Mince Wellington. It is filled with New Zealand made @plantfoodsnz ground mince, mushrooms, and fresh herbs. It’s a very satisfying plant-based Wellington, thanks to its flavourful and hearty filling. plan*t ground mince used in this recipe provides an amazing meaty texture and flavour. Better for you, better for the planet. It’s the perfect centrepiece for a family Christmas celebration.


 

🍽 Serves 4-5 🕘 1 hour Difficulty: Intermediate

 

Ingredients:


1 Tbsp vegan butter

A small handful of fresh sage, chopped

2 yellow onions, chopped

4 cloves of garlic, minced

1 spring of rosemary, diced

4 sprigs of thyme, leaves picked and diced

400g white bottom mushrooms, chopped

1 pack of @plantfoodsnz ground mince

2 Tbsp of tomato paste

1 tsp of maple syrup

1 Tbsp of Worcestershire sauce

1 Tbsp of Dijon mustard

¼ cup of applesauce

1 Tbsp of ground flax seeds

3 Tbsp water

1 tsp sea salt

½ tsp ground pepper

Vegan puff pastry



Glaze:

1 Tbsp vegan butter, melted

1 tsp maple syrup

1 tsp plant milk


 

Instructions:


1. Prepare the ingredients. Chop and dice vegetables, herbs, and mushrooms.

2. In a large frying pan, melt the butter with chopped sage.

3. Add onion, garlic, thyme, and rosemary. Sauté until translucent and fragrant.

4. Add chopped mushrooms and sauté on medium heat for 10 more minutes.

5. In the meantime, in a small bowl, combine ground flax seed with water and set aside.

6. In a food processor, place @plantfoodsnz ground mince, applesauce, tomato paste, mustard, Worcestershire sauce, maple syrup, flax seed mixture, salt, and pepper. Pulse a few times until all the ingredients are well combined and the mince has broken.

7. Add the content from the food processor to the frying pan and mix well. Simmer until reduced and thickened – approx. 10 minutes.

8. Preheat the oven to 200’C.

9. Unroll puff pastry sheet and lay it over the baking sheet. Spoon the mince filling into a tight log on one half of the pastry sheet, leaving the edges clean from any filling. Fold the pastry around the filling and tightly join the sides together. 

10. Roll the loaf over and score a pattern of your choice on the top.

11. In a small bowl, whisk melted vegan butter, plant milk and maple syrup.

12. Brush the top and sides of the loaf with the mixture and place in the oven. Bake for 35-40 minutes (until golden brown).

13. Let it cool for 10 minutes and slice.
