Vegan Nacho Cups

These crispy, flavor-packed taco cups are a joy to eat - with golden tortilla shells, a rich, saucy bean filling, and just the right crunch from crushed corn chips. Easy to make, fun to eat, and perfect for lunch boxes or family meals. Kids and adults alike will love every bite.
🍽 Makes 6 cups 🕘 35-40 minutes Difficulty: Beginner
Ingredients:
1 tsp olive oil
1 medium onion
1 can of black beans
2 Tbsp nacho seasoning (store-bought or homemade)
1 Tbsp sweet paprika powder
1 can of whole peeled tomatoes
½ red capsicum
½ yellow capsicum
1 cup corn chips
6 taco tortillas
Instructions:
Prepare the ingredients. Chop the capsicums. Drain the beans. Crush the corn chips into smaller pieces.
In a large frying pan, heat the oil to medium, place the onion and sauté for 4 min. Add black beans and seasonings. Stir well and sauté for 5 min.
Add peeled tomatoes, break them down with a spatula and simmer for 10min. Add bell peppers and mix well.
Preheat the oven to 180’C. Place the taco tortillas into muffin trays and fill them with the nacho mix.
Place corn chips on top.
Bake for 20 min.
Remove from the oven and let them cool down.
