Vegan Pierogi Grilled Sandwich


Pierogi is almost a sacred food in Poland and taking such a big twist on this very traditional recipe... well, what can I say, it was worth it and we are obsessed with these sandwiches. Let me know what you think šŸ˜Š


šŸ½ Serves 2-3

šŸ•˜ 40-45 minutes


Ingredients

  • 5-6 medium potatoes

  • Ā½ block firm tofu

  • 2 medium onions

  • 1 Tbsp vegan butter

  • Salt, pepper

  • Wholegrain bread or your favorite bread

  • Vegan butter to spread on the bread


Bacon bits

  • Ā½ block firm tofu

  • 1 tsp soy sauce

  • 1 tsp maple syrup

  • Ā½ tsp smoked paprika

  • Ā¼ tsp garlic powder

  • Salt

  • 1-2 Tbsp olive oil to fry


Instructions

  1. Prepare the ingredients: peel the potatoes and cut them into quarters. Boil the potatoes for 25 minutes or until soft. (pinch with a fork to check)

  2. To make the bacon bits: Cut Ā½ of the tofu into small cubes, approx. 0.5cm. In a medium bowl, place the tofu. Add soy sauce, maple syrup, smoked paprika, garlic powder, and salt. Mix well until evenly coated.

  3. In a large frying pan, heat the oil and place the tofu. Fry and stir for between 7-8 minutes.

  4. Drain the potatoes and let them cool.

  5. In the meantime, peel and chop the onions. In a large frying pan, heat the oil to medium, add chopped onions and fry until golden.

  6. Mash the potatoes with the other Ā½ of the tofu (crumb with your fingers)

  7. Add fried onions, butter, bacon bits, salt, and pepper to taste. Mix well.

  8. Spread vegan butter over both sides of the bread slices.

  9. Heat a large frying pan, place 2 slices of buttered bread. Fry for 3 minutes on medium heat, flip and spread the pierogi mix on top of one of the slices. Cover with the 2nd bread slice, press to combine. Fry for 2-3 more minutes.

  10. Serve immediately and enjoy!
