Vegan Pulled Jackfruit Burger

One of the best burgers you’ll ever taste - juicy, flavorful, and packed with smoky-sweet goodness. This plant-based jackfruit burger pairs tender shredded jackfruit simmered in a rich, tangy sauce with fresh avocado and grilled pineapple for the perfect balance of sweet and spicy. Quick to make, totally satisfying, and absolutely addictive. You’ve got to try it!

Ingredients:
1 can of jackfruit (shredded)
1 small onion (diced)
2 garlic cloves (diced)
1 Tbsp olive oil
2 Tbsp apple sauce (sugar free)
1 Tbsp raw sugar
1 Tbsp of sweet paprika
1 tsp smoked paprika
1 Tbsp soy sauce
½ cup vegetable stock (or plant-based chicken stock)
3 Tbsp tomato sauce
1 Tbsp tomato paste
½ Tbsp mustard
1 Tbsp apple cider vinegar
Fresh pineapple (sliced)
1 fresh chili (optional)
Avocado (sliced)
Burger buns
Vegan mayo
Instructions:
Drain the jackfruit from water and shred it with a fork (see video). Dice the onion and garlic. Cut the pineapple and avocado.
In a large frying pan, heat the oil, add onion and garlic, and fry until golden. Add apple sauce and sugar. Let it simmer for 2-3 minutes. Add jackfruit, soy sauce, and vegetable stock. Mix well until combined.
Add all the spices and sauces — dried capsicum, smoked paprika, tomato paste, tomato sauce, mustard, and apple cider vinegar. Mix well and simmer for 10-15 minutes more.
In the meantime, grill the pineapple for 3-4 minutes on each side.
Optionally, add fresh chili to the jackfruit and mix well.
Toast the burger buns if desired.
Assemble the burger: place the avocado, jackfruit mixture, grilled pineapple, and mayo.
Serve immediately and enjoy!
