I am obsessed with Christmas food and have already planned everything. Here is one of my favorite meals – Vegan Roasted Cauliflower. It’s crunchy, juicy, and smoky. Yum. I’m in love with it.

🕘 50-55 minutes



Ingredients


  • 1 whole cauliflower

  • 3 Tbsp olive oil

  • 3 Tbsp maple syrup

  • 2 Tbsp tomato paste

  • 3 Tbsp lemon juice

  • 1 tsp garlic powder

  • 1/2 tsp sweet paprika powder

  • 1 Tbsp dried capsicum (optional)

  • ½ tsp chilli powder

  • 1/4 tsp cumin powder

  • 1 tsp smoked paprika

  • 1 tsp salt

  • 2 Tbsp thyme

  • 3 Tbsp Sliced roasted almonds to serve

  • Fresh thyme to serve


Instructions


  1. Preheat the oven to 180’C. Boil a large pot of water. Place the cauliflower and cook for 20 min.

  2. To make the sauce: in a medium bowl combine: olive oil, maple syrup, lemon juice, tomato paste, garlic powder, cumin, smoked paprika, paprika powder, chili powder, salt, thyme.

  3. Carefully dry the cauliflower and place it on a baking tray. Brush on the sauce on the bottom of the cauliflower, flip over and pour the remaining sauce on the top. Make sure it’s covered evenly.

  4. Roast for 45 minutes.

  5. Assemble the plate: Place cauliflower in the center, top with fresh thyme and roasted almonds.

  6. Enjoy!
