We love delicious creamy pasta. Even better if it's nutritious and easy to make. This recipe ticks all these boxes. Make sure to save it for when you need it 💚

🕘 40-45 minutes
Ingredients
2 red capsicums
1 tomato
1 tsp olive oil to roast
4-5 garlic cloves
½ chili pepper
1 can lentils
1 Tbsp balsamic vinegar
1 Tbsp hemp oil @hemp.nz
¼ cup hot water
½ tsp salt
½ cup aquafaba
¼ cup sliced almonds
250g spaghetti pasta
Instructions
Prepare all the ingredients. Cut capsicums into quarters, slice the chili pepper. Preheat the oven to 200’C.
Place capsicums, tomato, garlic and chili into an oven dish. Pour a dash of olive oil, sprinkle with salt and pepper. Roast for 25min.
In the meantime, cook the pasta according to the instructions. Don't rinse it 😊
Remove the vegetables from the oven. Let them cool down. Peel the garlic cloves.
In a food processor, place lentils, roasted vegetables, aquafaba, water, hemp oil, balsamic vinegar. Blend until smooth. Roast sliced almonds on a dry frying pan.
Pour the sauce over the pasta and mix well.
Serve with freshly roasted almonds.
