Vegan Taco Salad

Have you ever had a taco salad? Yum! I love it and I’m sure you will too! It’s packed with flavor, very filling, has a nice fresh crunch, and is finished with a smooth and creamy dressing. Save this recipe for later 😉

Homemade taco seasoning:

  • 1 tsp ground cumin

  • 1 tsp sweet paprika

  • ½ tsp raw sugar

  • ½ tsp dried oregano

  • ½ tsp salt

  • ¼ tsp ground pepper

  • ¼ tsp chili powder

  • ¼ tsp garlic powder

  • ¼ tsp onion powder

  • 2 cups of romaine/iceberg lettuce

  • 1 cup of cherry tomatoes, halved

  • 1 ½ cups of black beans

  • 1 ½ cups of corn kernels

  • 1 medium red onion, chopped

  • 1 ½ cups of homemade or storebought tortilla chips

Homemade tortilla chips:

  • 2 wraps (I used Low carb @farrahsnz )

  • 1 tsp avocado oil (I used @avohaven - gifted)

  • ½ tsp of taco seasoning


  • 1/3 cup of taco sauce (I used @oldelpasonz )

  • ¼ cup of vegan mayo (I used @heinz_au)

  • ¼ cup chopped coriander


  1. If using homemade taco seasoning, in a small bowl, combine: cumin, paprika, raw sugar, oregano, salt, garlic and onion powder, and chili powder. Preheat the oven to 190’C.

  2. Brush avocado oil over the tortilla wraps. Sprinkle taco seasoning and cut into 8 triangles. Place them onto a baking tray lined with baking paper.

  3. Bake for 15 minutes, flip halfway through the baking process.

  4. In the meantime, using a fork shred the jackfruit. Heat an oiled frying pan to medium. Add jackfruit and taco seasoning. Stir to coat evenly and fry for 5 minutes.

  5. Prepare the vegetables: Chop lettuce, red onion, coriander, and slice cherry tomatoes.

  7. Remove the tortilla chips from the oven and let them cool. Crush them into smaller pieces.

  8. Add water to the jackfruit and place the lid on. Cook for another 3-4 minutes.

  9. Remove from the heat, and transfer the jackfruit onto a shallow bowl to let it cool.

  10. Assemble the bowl: place lettuce, jackfruit, corn kernels, black beans, cherry tomatoes, red onions, and tortilla chips.
