Apple Pie Gingerbread Oatmeal

A perfect Christmas breakfast

If you aren't in the Christmas spirit yet, this will get you there. 🎄💚

🍽 Serves 2-3

🕘 15-20 minutes


  • ½ cup rolled oats

  • 1 cup plant-based milk

  • 1/3 cup pecans

  • 2-3 apples

  • 1/2 cup water

  • 1 Tbsp lemon juice

  • 1 tsp cinnamon

Date gingerbread sauce:

  • 1 cup dates (soaked overnight)

  • 1 tsp cinnamon

  • 1 tsp ginger powder

  • ½ tsp cardamom

  • Big pinch of salt


  1. To make gingerbread sauce: Place dates in a jar/bowl. Pour hot water, just enough to cover them all and soak overnight.

  2. Pour dates together with the water into a food processor. Add all the spices, and blend until smooth.

  3. You can store this sauce in the fridge for 2-3 weeks.

  4. To make cinnamon apples: Chop the apples into small cubes. Place 2/3 of chopped apples in a saucepan, add water, lemon juice and cinnamon. Simmer until the apples are soft 5-6min.

  5. In the meantime, heat the milk. Add oats and stir until combined. Cook for 5min.

  6. Assemble the bowl: place oatmeal and stewed apples

  7. Top with the remaining chopped apples, dates sauce, and pecans

  8. Enjoy!
