If you are still skeptical about using beans or chickpeas in your baking, you must try this recipe! These Black Bean Brownie Cupcakes and so deliciously fudgy and have a lovely crunch. No one would ever believe they were made with beans!

Ingredients


  • 1 can of black beans

  • ½ cup coconut flour

  • 1 tsp baking powder

  • 3 Tbsp soft brown sugar

  • 2 Tbsp cacao powder

  • ¼ tsp salt

  • 3/4 cup extra virgin olive oil

  • Juice from 1 medium-size orange

  • 1/3 cup maple syrup @ceresorganics

  • 4 pieces of vegan dark chocolate (melted) I used 65% dark chocolate @whittakersnz

  • ½ Tbsp vanilla essence


  • ½ cup vegan chocolate chips + ¼ cup for the topping.

  • ½ cup walnuts (chopped)

  • Icing sugar


Instructions


  1. Prepare all the ingredients. Preheat the oven to 200'C. Chop the walnuts. Squeeze orange juice. Drain the beans. Melt the chocolate

  2. In a food processor, place: black beans, coconut flour, baking powder, brown sugar, cacao powder, salt, olive oil, orange juice, maple syrup, melted chocolate, vanilla essence. Blend until smooth.

  3. Mix in chopped walnuts and chocolate chips.

  4. Place in a muffin tray lined with baking cups. Top with the remaining chocolate chips

  5. Bake for 17 minutes.

  6. Cool for at least 10 minutes.

  7. I love them after letting them set in the refrigerator for 1 hour.

  8. Cover with icing sugar and enjoy!
