My recent obsession and most likely your new one too - Breakfast in a jar - Banoffee. I highly recommend you try it! It's like having a dessert for breakfast, yet it's packed with nutritious fuel for your mind and body. It's vegan (of course) and gluten-free
🍽 Serves 3 🕘 15-20 minutes Difficulty: Beginner
Ingredients:
Base:
½ cup almond meal
¼ cup hemp hearts
¼ cup of LSA
1 tsp cacao
¼ cup walnuts, chopped
1 tsp coconut sugar
2 Tbsp almond butter
¼ cup plant milk
Caramel:
½ cup of dates
1/3 cup of plant milk
Pinch of salt
½ tsp vanilla extract
Chia pudding:
1/3 cup chia seeds
1 ½ cup plant milk
½ tsp vanilla extract
Pinch of salt
2 bananas
1/3 cup of coconut Greek style yogurt
1 tsp of cacao
Instructions:
Make the base by placing all the base ingredients in a food processor/blender and pulsing a few times until combined and chunky. Transfer onto a bowl and set aside.
In a medium bowl, combine chia seeds with plant milk, vanilla and salt. Whisk well and set aside.
Make the caramel layer: in a food processor/blender place dates, plant milk, vanilla and salt. Blend until smooth.
Chop the bananas
Assemble the jars, place the chunky base and press to the bottom of the jars, add caramel and spread evenly, place the bananas, pour the chia pudding, and top with coconut yogurt and sprinkle cacao.
Store in the fridge for up to 4 days.
Notes: to prevent bananas from browning, squeeze a little bit of lemon juice on bananas before placing them in the jars.
