Is there anything better than gingerbread cookies? Perhaps Chocolate Coated Gingerbread Cookies. This is my favorite recipe, they are so tender and flavorful.

Ingredients
1 ½ cups wholemeal or plain flour
1/2 tsp baking powder
4 Tbsp brown sugar
1 Tbsp of organic cacao powder
1 tsp cinnamon
1 tsp ginger powder
½ tsp ground cloves
½ tsp cardamom powder
¼ tsp nutmeg (optional)
1 big pinch of salt
¼ cup maple syrup
3 Tbsp vegan butter
2 Tbsp coconut yoghurt
4 Tbsp applesauce
1 Tbsp soy milk to brush
Chocolate glaze:
150g dark chocolate
½ maple syrup
Instructions
In a large bowl, combine flour, cocoa, spices, baking soda, and sugar. Stir thoroughly with a spoon.
In a pot, melt the butter with maple syrup on low heat. Set aside to cool.
Add apple sauce and yoghurt to the butter and maple syrup mix.
Preheat the oven to 180’C.
Combine dry and wet ingredients.
Form a ball. Sprinkle with flour and roll the dough into a not too thin cake, max 1cm thick.
Cut out shapes and place them on a baking tray lined with baking paper, keeping the spaces apart.
Brush the top of the gingerbread cookies with soy milk and bake for 8 minutes. Let them cool.
Melt the chocolate. Mix in maple syrup.
Pour chocolate on the gingerbreads. Let it cool.
Serve with a glass of plant-based milk 😉
