This Crispy Peanut Satay Tofu is not only super easy and quick to make but also insanely delicious. It’s one of Nick’s favorites. It comes together in approx. 30 minutes, which makes it another plant-based weeknight dinner to add to your rotation.


 

🍽 Serves 2-3 🕘 30 minutes Difficulty: Beginner

 

Ingredients:

  • 1 pack of firm tofu

  • 1/3 cup corn flour to coat the tofu


  • ¼ cup peanut butter (crunchy or smooth)

  • 1 Tbsp grated ginger

  • 2 Tbsp soy/tamari sauce

  • 1 tsp chili paste (I used sambal)

  • 1 cup of water

  • 1 pack of green beans, steamed or blanched


2-3 Tbsp vegetable oil to fry the tofu


Garnish:

  • Chopped peanuts and spring onion

Rice to serve


 

Instructions:

  1. Prepare the ingredients. Press the tofu if watery to squeeze out the liquid. Cut the tofu into think slices and then diagonally to shape triangles.

  2. Place corn flour in a shallow bowl and add a big pinch of salt.

  3. Evenly coat the tofu with corn flour.

  4. Warm the oil over medium-high heat in a large frying pan. Place the tofu and fry until golden on both sides.

  5. In the meantime, steam or blanch green beans.

  6. Prepare the sauce: in a food processor/blender place soy/tamari sauce, chili paste, peanut butter, grated ginger, and water. Blend until very smooth.

  7. Once the tofu is evenly golden brown on both sides, pour the sauce in and let it simmer for 2-3 minutes.

  8. Incorporate green beans into the sauce and serve immediately topped with chopped peanuts and spring onion and accompanied by rice.

  9. Enjoy!
