Easy Plum Cheesecake

This Easy Plum Cheesecake is a quick and dreamy dessert that takes under 10 minutes to prepare. Sweet, spiced plums meet silky plant-based cream cheese and crunchy Biscoff crumbs for a no-bake treat that’s full of flavour and texture. Perfect for when you want something simple, satisfying, and seriously delicious.

Ingredients:
4 plums
½ tsp cinnamon
1 Tbsp raw sugar
120g plant-based cream cheese
¼ cup plant-based milk (I used Soy milk)
½ tsp vanilla essence
1 tsp raw sugar
1 Tbsp lemon juice
125g biscuits (1/2 pack Lotus Biscoff) chopped
Instructions:
Chop the biscuits. Chop plums into 1-2 cm pieces.
Place the plums in a medium-size saucepan. Add sugar and cinnamon. Cook on medium-low heat for approx. 5 min.
In a food processor, place cream cheese, vanilla essence, sugar and lemon juice. Blend until smooth.
Assemble in a bowl/jar/glass: spread crushed biscuits on the bottom, pour the cream cheese and spread evenly, pour plum sauce on top. Sprinkle cinnamon on top.
Refrigerate for 1h.
