Easy Plum Cheesecake


It takes less than 10min to prepare and tastes delicious. Let it tickle your taste buds. šŸ˜‹

Ingredients

  • 4 plums

  • Ā½ tsp cinnamon

  • 1 Tbsp raw sugar


  • 120g cream cheese (I used 1/2 pack of Dairy-free cream cheese @angelfood)

  • Ā¼ cup plant-based milk (I used Soy milk)

  • Ā½ tsp vanilla essence

  • 1 tsp raw sugar

  • 1 Tbsp lemon juice


  • 125g biscuits (1/2 pack Lotus Biscoff) chopped

Instructions

  1. Chop the biscuits. Chop plums into 1-2 cm pieces.

  2. Place the plums in a medium-size saucepan. Add sugar and cinnamon. Cook on medium-low heat for approx. 5 min.

  3. In a food processor, place cream cheese, vanilla essence, sugar and lemon juice. Blend until smooth.

  4. Assemble in a bowl/jar/glass: spread crushed biscuits on the bottom, pour the cream cheese and spread evenly, pour plum sauce on top. Sprinkle cinnamon on top.

  5. Refrigerate for 1h.
