How to make Vegan Protein Pancakes


Gluten free, nut free, sugar free DELICIOUS vegan protein pancakes. This recipe could not be easier and yet, it’s so delicious and packed with the good stuff – protein, fibre, omegas, you name it! Amazing right? Save this recipe for later!


Ingredients:

  • 1 apple

  • 1 cup of plant milk

  • 2 medjool dates

  • 1/3 cup of hemp hearts @hemp.nz - gifted

  • 1 cup buckwheat flour

  • 3 Tbsp chickpea flour

  • 1 tsp baking powder

  • 1/2 tsp cinnamon

  • A big pinch of salt

  • 1/4 cup of hemp oil @hemp.nz - gifted

  • 1 tsp of oil of your choice to fry, I used avocado oil.

Instructions:

  1. Prepare the ingredients. Cut an apple into quarters and remove the core.

  2. In a blender, place: apple, plant milk, dates, hemp hearts, buckwheat flour, chickpea flour, baking powder, cinnamon, salt, and hemp oil. Blend until smooth – approx.1 minute. Set aside for 5 minutes to let the mixture thicken.

  3. Heat an oiled large frying pan to medium, pour the mixture (approx. ¼ cup per pancake) and fry the pancakes until golden, approx. 2 minutes, flip and fry for 2 more minutes. Repeat with the remaining mixture.

  4. Serve the pancakes topped with your favorite fruit and compote/jam/maple syrup.
