How to make Vegan Tzatziki

Ingredients:

  • 1 block of silken tofu

  • 1/3 cup plant milk

  • 1 Tbsp extra virgin olive oil

  • 1 Tbsp white wine vinegar


  • ½ telegraph cucumber, deseeded and grated

  • 2 Tbsp chopped dill

  • 2 cloves of garlic, minced

  • ½ tsp salt

  • Cracked pepper


Instructions:

  1. Prepare the ingredients. Cut the cucumber in half and, using a teaspoon, remove the seeds. Grate the cucumber. Place the grated cucumber into a tea towel and grab all 4 corners to form a bag. Squeeze to drain the excess juices. Mince the garlic and chop the dill.

  2. In a food processor, place: tofu, plant milk, white wine vinegar, and extra virgin olive oil. Blend until very smooth and creamy, and transfer it to a medium bowl.

  3. Add grated cucumber, dill, garlic, salt, and pepper. Mix until well combined.

  4. Serve chilled topped with more dill, kalamata olives (optional), and a drizzle of extra virgin olive oil, accompanied by pita bread and fresh vegetables.
