Lettuce Wraps with Grated Tofu

Inspired by the classic Chinese Peking Duck lettuce wraps, this plant-based take brings all the vibrant flavors and textures in a fresh, easy-to-make appetizer. Instead of duck, we use grated tofu marinated in a rich blend of soy, hoisin, peanut butter, and spices, then baked to golden perfection. Crispy lettuce leaves cradle the savory tofu mixture, crunchy peanuts, and fresh veggies for a delicious bite full of contrast and color. Perfect for impressing guests or enjoying a light, flavorful snack in under 30 minutes!


🍽 Serves 3-4  🕘 25-30 minutes Difficulty: Beginner


Ingredients:

1 block firm tofu (grated) ½ red onion (finely chopped) 1 red capsicum (finely chopped) ½ cup peanuts (chopped) Marinade:

3 Tbsp soy sauce 2 Tbsp hoisin sauce 1 Tbsp sesame oil 1 Tbsp rice vinegar/ white wine vinegar 1 Tbsp chili sauce 1 Tbsp smooth peanut butter 1 Tbsp maple syrup ½ tsp ginger powder 1/2 tsp garlic powder Cos lettuce ½ lemon Shallots (chopped) Hemp oil


Instructions:

1. Press the tofu well to drain from water. 2. Prepare all the ingredients. Preheat the oven to 200’C. 3. Grate the tofu on a cheese grater. 4. In a large bowl combine soy sauce, hoisin sauce, sesame oil, rice vinegar, chilli sauce, maple syrup, peanut butter, garlic powder and ginger. Add grated tofu and mix well. 5. Place the mix on a baking tray. Bake for 20 minutes until golden. Stir halfway through. 6. Assemble the plate: place the lettuce, fill it with the tofu, add capsicum, top with peanuts and shallots, squeeze lemon juice and pour some hemp oil. 7. Enjoy!
